Processed food

This is with reference to the editorial "Processing opportunities" (Business line, December 24). Many surveys have concluded that 30-40 per cent of the fruits and vegetables produced in India are lost in post harvest handling and less than 1 per cent is processed and sold in the market.

Rising income levels and changing food habits due to new working environment, makes the Indian working class a big consumer of processed food.
