Strategy The Residency's cake offering for Christmas Out Bureau
Coimbatore , Nov 14 THE Residency is planning to roll out 25 new cake and pudding varieties this festive season. This is apart from the traditional plum cake, plum pudding, Christmas pudding, ginger pudding and Yule Log that are made available year after year. The new exotic varieties proposed would include Elizabeth Gateaux (an English speciality), Pineapple Ice Parfait Torte (a German speciality), Almond Torte (a French speciality), Holland Gateaux, Gateaux Argentina (an Italian speciality) and Engadine Nut Torte (a Swiss speciality). According to the Executive Chef, Mr Ashok, all these specialities would have almond paste as the base. He disclosed the festive plan offering after the ceremonial cake mixing, a tradition that The Residency has upheld over the last several years. It starts a month ahead of Christmas. The concoction is prepared by mixing different varieties of dry fruits and nuts with liquor such as whisky, brandy, rum and wine. This mix is stored for a month to ferment before it is baked. "A week before Christmas, we have the cake tasting ceremony, which actually enables prospective buyers and customers to taste the offering. The phenomenal response for the festive cakes and puddings has enthused us to look for innovative recipes," Mr Ashok said. Apart from Coimbatoreans, The Residency has also managed to draw the attention of people from Kochi, Mumbai, Bangalore and Karur, who, according to Mr Ashok, placed bulk orders and `came back for more' every year.
