HELPING HAND: Vanilla pollination in progress in a plantation near Kochi. Natural vanillin, which has a huge domestic market, has to compete with synthetic vanillin. Vanilla production in the country is expected to rise to over 200 tonnes against an estimated 180 tonnes the previous year, according to the Spices Board.
