Sai Shanker to launch niche restaurant chain

Pune, Dec. 21 Pune-based Sai Shankar Management Services Pvt Ltd is investing Rs 100 crore in setting up a chain of specialty restaurants Soul Curry in India and abroad that will offer Kongunadu, Nanjilnadu and Chettinad cuisine.

The first restaurant of the Soul Curry chain was inaugurated at Wakad, near Pune by film actress Soha Ali Khan on Friday. The company expects to launch similar restaurants in Navi Mumbai, Indore, Jaipur and New Delhi, and one each in London and Dubai by 2010, Mr Jacob Sahay Aruni, Consultant Chef and Executive Director, Sai Shankar Management Services said.

Ms Tarita Mehendale Wakalkar, who has conceptualised the project, explained that the menu would be well researched “with a focus on forgotten cuisines from various regions of India”. While the first of the Soul Curry chain is a vegetarian restaurant, some would also serve non-vegetarian, she added.

Mr Aruni said the menu includes regional dishes from Tamil Nadu, Coorg, Kerala and Hyderabad, including Kongunadu cuisine of the Coimbatore belt in Tamil Nadu. “This cuisine is healthy and has abundant usage of herbs and spices predominantly dry ginger, roasted turmeric, sesame seeds and peanuts.”
