FARM FRESH: Pineapples being loaded onto a mini truck near Kochi. The fruit, relished for its tangy flavour, is highly favoured in the raw form in most five star menus and cocktail preparations. Value-added forms, such as beverages, culinary pastes and in the processed form by osmotic dehydration, have increased the shelf life of the fruit. The fruit is mainly cultivated in the southern States.
