Sweet and sour: Sacks of anardana, or dried pomegranate seeds, at Khari Baoli market in New Delhi. The seed spice has a mildly fruity, sweet and sour taste and is used to make chutneys, pastries and breads in West Asia. Anardana,sold at Rs 380-400 a kg, is mainly produced in Shimla. — Kamal Narang
