Indian curries in favour at US food conference

THE overwhelming acceptance of Asian cuisine and the preference for Indian food at the recently concluded Flavour International Conference and Festival signals the tremendous scope for consumption of spices, particularly specialised spice blends among the catering segments in the US.

The conference, organised by the Culinary Institute of America in California, brought together Asian cuisines and cultures and one of the largest gatherings of top Asian Chefs and food experts in the US, Mr S. Kannan, Director (Marketing) Spices Board, who participated at the conference told Business Line.

"The three-day culinary event from November 11 energised about what Asia has to offer its customers", he said.

The conference attracted a national audience of close to 600 chefs, food service managers, trade and consumer media and other food service industry professionals.

Spices Board has sponsored lunch in the conference on November 12, predominantly of Kerala recipe.

The food was appreciated for its ethnic taste. The encouraging interest and preference for Indian food may promote consumption of spices in the US which in turn may benefit India,'' he said.

The Spices Boardas part of its efforts to boost export of Indian spices in the traditional ad non-traditional markets abroad, has been promoting Indian cuisine in several countries.
